White Bean Dip

Yesterday I shared my thoughts about the importance of having sancks on hand.

Today I'd like to share with you a nutritious and satisfying snack idea.

White bean dip.

This is a great go along with cut up veggies and pita chips.

It can be served casually to the kids in the afternoon, packed in that cooler I mentioned yesterday, and it is also great for setting out when you have company.

White Bean Dip
garlic cloves, as many as you would like
red pepper flakes, as much as you would like
2 tablespoons olive oil
1 can white beans
Coarsely chop the garlic and add to a small saucepan with the olive oil and the red pepper flakes. Heat over a medium temperature until the garlic sizles and before it browns. Meanwhile drain and rinse the white beans and add to your food processor. Add the olive oil mixture and whirl until smooth and creamy. You can add more olive oil if you think it needs it.

Any combination of your favorite raw vegetables will go well with this dip.
broccoli
carrots
celery
cucumber
radishes
mushrooms
pea pods

Or anything else you might think of...

Pita Chips
1 package pita bread
olive oil
salt
rosemary, if desired
Brush both sides of the pita bread with the olive oil. Cut into quarters and spread them out on a cookie sheet. Season with the salt and the rosemary. Bake in a preheated 350 degree oven until crisp.

And there you have it, in know time at all, a delicious and good for you snack idea.
